Spicy Split Pea Soup

Ingredients:

5

cups of water

5

oz split peas

1

onion

 

salt

 

freshly ground black pepper

 

parsley to garnish

 

Select from the following:
  • 2 teaspoons cardamom
  • 2 teaspoons cinnamon
  • 1 teaspoon cloves
  • 2 teaspoons coriander
  • 2 teaspoons cumin
  • 1 clove garlic
  • 1 tablespoon lemon juice
Directions:
     

Bring 5 cups of water to a boil

Cut the onion into eighths

Add: ½ teaspoon of salt, split peas, & onion to the boiling water

Cover tightly, simmer 60 minutes

Add spices, starting with a little then adding more as you taste it.

Simmer 10 more minutes

Notes:
 
  • Serves 3-4.
  • Because the cooked peas have the ability to block your taste buds somewhat, make sure you rinse your mouth with a drink of water after each time you taste the soup while seasoning it.
