Libbie's Chicken Soup

Ingredients:

1

cut-up whole chicken (A hen, not a fryer. If you can't find a hen, use two fryers.)

1

medium whole onion

2

carrots

2

celery stalks

1

teaspoon of salt, at a minimum

Optional:
clove of garlic cut in half ("I highly recommend." Harvey Faber)
Directions:
     

Wash and skin the chicken. Remove as much fat as possible.

Pack the chicken into the soup pot. (skip the liver)

Add enough water to cover the chicken by 1.5 inches.

With the lid off, bring the water to a boil, skim off the albumen.

Cut the vegetables into 6" or less pieces. Add the vegetables and optional garlic.

Cover and simmer until the chicken is done.

Toss the vegetables.

Taste and add salt as needed.

Remove the chicken, follow a matzo ball mix, if desired.
