Cabbage Soup

Ingredients:

1

onion, finely chopped

1

tablespoon garlic, finely chopped

1

tablespoon margarine

16

ounces canned tomato sauce

½

cup sugar

½

cup cider vinegar

2

small heads cabbage, shredded

 

water to cover

1½

tablespoons corn starch

½

cup water

½

pound diced beef (optional - leftovers are fine)

 

Salt & Pepper to taste
Directions:
     

Cook onion and garlic in margarine until transparent.

Add tomato sauce, sugar and vinegar and bring to a boil. Reduce heat and simmer for 20 minutes.

Add cabbage and simmer for 40 minutes more over low heat.

Mix cornstarch and ½ cup water until smooth. Stir into soup gradually and continue stirring until liquid is translucent.

Add diced beef (if using), salt and pepper to heat through. Serve and enjoy.
