Passover Apple Pudding

Ingredients:

cups matzoh farfel

2

cups boilng water

6

eggs

8

medium apples. peeled, cored, and grated

1¼

cups sugar

1

lemon, juice & rind of

4

tablespoons sweet wine

4

tablespoons honey

½

teaspoon salt

1

teaspoon cinnamon

 

cooking spray
Directions:
     

Mix farfel & boiling water in a large bowl. Set aside to cool.

Beat eggs and add to the farfel mixture.

Fold farfel mixture into apples.

Add sugar, salt, and cinnamon. Mix well.

Bake in a 3-quart baking dish, which has been sprayed or oiled, for 25 minutes at 350°

While this is baking, combine lemon juice and rind with wine and honey. Bring to a boil. Pour over pudding and bake for 25 minutes more or until golden brown on top.
