Pumpkin Pie

Inspired by Libby's Famous Pumpkin Pie; 1995 and Better Homes and Gardens New Cook Book; 1974.

Ingredients:

1

un-baked 9-inch deep dish pie shell (Pet Ritz frozen works)

2

eggs

1

can (16 ounces) Libby's Solid Pack Pumpkin

¾

cup granulated sugar

½

teaspoon salt

1

teaspoon ground true cinnamon

½

teaspoon ground ginger

¼

teaspoon ground cloves

½

teaspoon ground nutmeg

1

can (12 fluid ounces) Carnation Evaporated Milk
Directions:
     
  • Heat oven to 425°F. If using a metalic pie tin, heat baking sheet in oven.

  • Lightly, very lightly, beat the eggs in a large bowl.

  • Stir in remaining ingredients in order.

  • Pour into pie shell.

  • Bake for 15 minutes.

  • Reduce heat to 350°F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean.

  • Cool on wire rack.
