Pancakes

Ingredients:

1¼

cups all-purpose flour

3

teaspoons baking powder

1

tablespoon sugar

½

teaspoons salt

1

egg

1

cup milk

2

tablespoons of vegetable oil (corn, walnut, etc.) or melted butter

1/8

teaspoon vanilla (Harvey's secret)
Directions:
     

In a bowl, mix together the dry ingredients.

In a second bowl, beat the egg, mix in the oil/butter, mix in milk, add vanilla.

Add the wet stuff to the dry stuff, stirring just till moistened.

Ladle, in less than ¼ cup amounts, onto a medium hot buttered frying pan.

Notes:
  Makes about eight 4" pancakes.
