Matzo Brei

Ingredients:

matzoth

2

medium eggs

2

teaspoons brown sugar

2

shakes of cinnamon
1 dash of salt
  hot water
  butter or margarine
  maple syrup or honey
Directions:
     

Break matzoth in a large bowl, pour hot water over.

In a small bowl, break the eggs and mix with brown sugar, cinnamon, and salt.

After a couple of minutes, pour water off from the matzoh. Squeeze surplus water out, add other ingredients and mix well.

Melt a little butter or margarine in a frying pan, add mixture all at once. Fry as if it were scrambled eggs. Cook through until well done but still soft.

Serve immediately, with cinnamon and syrup or honey.

Notes:
  Serves 1.

  • If you are making this for Passover, you will want to use Spreckels Brownulated Sugar and will probably have a hard time finding kosher for Passover maple syrup.
