Cinnamon Raisin Noodle Kugel

Ingredients:

8

ounces of medium noodles

¼

pound (1 stick) of melted butter

4

eggs

1

pint (16 ounces) cottage cheese

1

pint (16 ounces) sour cream

1

cup of raisins

¾

cup of sugar

1½

teaspoons of cinnamon

¼

teaspoon nutmeg
Directions:
     

Cook noodles according to package instructions; rinse; drain.

Mix the noodles and melted butter together in a large bowl.

One at a time, mix and add: eggs, cottage cheese, sour cream, and raisins.

Place in a greased 9" x 13" pan.

Combine sugar, cinnamon, and nutmeg. Sprinkle over the kugel.

Bake at 350° (325° if using Pyrex) for 1 hour.

  • I tried the Cinnamon Raisin Noodle Kugel recipe, and it was delicious! I used 12 oz of egg noodles instead of 8, and that worked fine. Compared with other kugel, this one was a little richer. I think that if I wanted to make it less rich, I'd just double the egg noodles. However, I thought as it is it was very good. If you want to spread the sweetness of it out, you could mix half of the cinnamon/sugar/nutmeg combo into the rest of the mixture and just sprinkle the rest on top.
