Death by Chocolate Cookies

Ingredients:

1

package (8 squares) Baker's Semi-Sweet Baking Chocolate

¾

cup firmly packed brown sugar

¼

cup butter (½ stick) softened or melted

eggs

1

teaspoon vanilla

½

cup flour (if omitting nuts or their substitute, increase flour to 3/4 cup)

¼

teaspoon baking powder

1 1/3

cups of premium chocolate chips – like Ghirardelli or Guittard. (This is less than an 11.4 ounce bag. The original recipe called for chopping the chocolate of a second box of Baker's Chocolate, which is too much work!)

cups chopped pecans (Okay to substitute 2 cups total of any of the following for the pecans: nuts, raisins, toasted Baker's Angel Flake Coconut, dried cherries, macadamia nuts, dried cranberries, toasted slivered almonds, dried chopped apricots, or dried mixed fruit bits.)
Directions:
     
  • Heat oven to 350°F

  • Microwave 8 squares of chocolate in large microwavable bowl on High for 2 minutes; turning after 1 minute.

  • With a large strong wooden spoon, stir until chocolate is melted and smooth.

  • Stir in sugar, butter, eggs, and vanilla until well blended.

  • Stir in flour and baking powder.

  • Stir in chocolate chips and nuts/extras.

  • Glob ¼ cupfuls onto ungreased cookie sheet.

  • Bake for 13 to 14 minutes or until cookies are puffed and feel set to the touch.

  • Place waxed paper under the cooling racks.

  • Cool 1 minute on cookie sheet before transferring to wire rack.

  • Wash scoop between batches.

Notes:
  Makes 15 - 18 cookies
